This quick recipe will surprise you in a positive way. First you can make it ahead of time and warm it up or even eat it cold. Second it will even convince the cauliflower sceptic and third the typical smell when you cook cauliflower is minimal.
Choose a really nice white head, rinse it properly and leave the green leaves on! Yes, that is a must and you will see that they taste real nice, too!
SIMPLE
Preparation time: 1 hour +
Oven temperature: 190°C
You need
1 head of cauliflower, greens on
1/2 cup of olive oil
2/3 cup of ground almonds mixed with bread crumbs
3 tbsp butter
1 cup Greek yoghurt
1 tbsp. fresh lemon juice
Cumin, salt, chili
1/2 cup parsley chopped
Just trimm the leaves so the cauliflower sits in the nest of its greens and cut the stem clean and flat so you can set it into a baking dish. Use plenty of olive oil over it, and generously rub the cauliflower and its greens with the oil.
Set the oven to 190°C and bake it until golden brown, then test with a meat fork, if it still needs more time to become tender, cover it with a foil to prevent the tops from charring and give it another 15 minutes.
It’s ready when you can divide it with a spoon.
This was a large cauliflower head, mine was in the oven an hour and 15 minutes covered for the last 20 minutes. The greens become crisp or sink down and taste, again … surprisingly good!
Make almond/ bread crumbs with melted butter and a cup of Greek Yoghurt with lemon juice, cumin, salt and chili. Finally top it with a handful of chopped parsley.
