Pancakes deserve a special place on every blog, and a little exercise before in order to deserve them alright. WE MADE THEM TODAY!
This morning the light was stunning and the dew on every tiny grass stalk glittered like silver sparkle. We took the dog for a walk before breakfast and she had to wait for us, as we just saw too many awesome details along the way. She probably thought we are becoming quite tiresome as we cannot keep up with her at all! But have a look for yourself, wasn't it worth to stop and see? This is the season for spider webs.
Julian claimed to be the expert and made absolutely perfect pancakes and if you fancy them just like us he will make you some any time. I don't think one can eat them only for breakfast they also taste great at dinner, or late night snack, just like any other comfort food!
We met this lovely siblings and her mom when they tried to cross the street. The mother was already on the other side and her young ones had to decide if we were friend or foe, so we waited until they dared to follow her.
Easy peasy recipe for 2
3 eggs
120 ml milk
120 g flour
1 tbsp. baking powder
pinch of salt and vanilla essence
butter for the pan
Whisk everything together and let stand for 15 min. Preheat your oven to 80°C and place a plate on the rack in order to keep those fluffy pancakes hot until you serve them or take pictures of them ...
In a non stick pan on medium heat place 1/2 teaspoon of butter and ladle a perfect round batter in a circling motion on the melted butter. Flip over after 2-3 minutes and when done keep them hot in your oven on a pile before you serve them. Lovely with just some maple sirup, fresh berries, hot chocolate anything that comforts you. You can try as well 50 g small chocolate chips in the batter, for the sweet tooth.
For the salty version and your Sunday Brunch: make significantly smaller cakes, 4 cm in diameter, and serve with cured or smoked salmon and cream frâiche, a sprinkle of lemon juice and some fresh cress. My absolut favorite !
