When I saw an image of baked nectarines on instagram this week I wanted to try it before they disappear from the markets. Please get some, I hope it is not to o late and treat yourself to this easy and healthy dessert, you will not regret it and certainly not fail!
Preparation time: 15 min
Baking time: 25 min
You need
one nectarine per person
1 tsp of your favorite jam, mine is a red currant jelly made by Anni, my neighbor*
1 tsp per person melted butter*
almond slivers*
a dash of Amaretto for the adults*
whipped cream or ice-cream*
*All amounts vary according to the size of your party, the more butter the better :)
All you do is you wash the nectarines and cut them in halves, separating them from the pit can be tricky if the fruit is not ripe enough, so twist the two halves gently against each other, then remove the pit. That should work if the fruit is best for eating. Place them in an oven proof dish and fill the pit wholes with 1 teaspoon of your jam or jelly. Pour the melted butter generously over the nectarines and add the almond slivers and if you like a dash of Amaretto liquor. Bake for 25 min at 175°C or 350F. What I love most about this recipe is that you get a sweet treat with no additional sugar, except from the jam! Plus they look amazing and smell divine!
